Guji Mesele | Ethiopia
A vibrant and jammy sensory spectacular. This heirloom lot utilizes a unique 4-day Aerobic fermentation process to transform the high-grown berries of Guji into an intensely fruit-forward, syrupy-bodied cup with crystalline citrus transparency.
The Story
MESELE KEBEDE is a 1st generation coffee producer whose dedication has been a defining force in the Guji Shakiso region. Starting his journey 20 years ago with partners, Mesele Kebede struck out on his own 10 years ago to build his first proprietary washing station in Shakiso, later expanding with a second in Hambela Deri. The Ritual
GUJI MESELE is designed for those who appreciate intensity, performing beautifully as a complex filter coffee or a vibrant, fruit-heavy espresso.
• Filter (V60): We recommend a clean 1:16 brew ratio using 91 - 93°C water. A structured three-pour method iLLUMinates the vibrant Mandarin Orange acidity and the deep Blueberry sweetness.
• Fruity Espresso: To capture a full-bodied experience, aim for a 1:2 ratio (e.g., 18g in, 36g out) in 28–30 seconds. The high density bean and aerobic processing create a syrupy, jammy espresso with concentrated notes of Concord Grape and pineapple.
